Sun Dried Tomato Dip


!±8± Sun Dried Tomato Dip

This is a great dip for crackers, toasted bread, potato chips, and cold sandwiches.

This condiment borrows from Mediterranean cuisine and it can accompany your favorite Mediterranean dishes.

I like this recipe because it saves me the time of going to the market, finding a suitable dip, and of course paying too much.

This recipe is tasty and economical, and it obviously cuts down on quite a bit of time. Every time I serve this, my guests ask for the recipe,

Sometimes I have printed copies ready to hand out; doing so saves me the time of repeating myself more than once.

This dip is great for indoors and outdoors activities, it can be pre-made too!

You may like to customize this by changing some of the ingredient's, I suppose the combinations are only limited by your creativity.

It takes less than 15 minutes to prepare, making it a quick fix if you have unexpected company; which could mean kid's sleep overs, guests,

Or, if you forget to buy something for a party you are attending.

Buy the ingredients ahead of time and freeze some of the ingredients so you will always be prepared for any event requiring a tasty condiment like this.

Makes: 1 1/2 cups

Serves: 6

Prep Time: 10 minutes

Total time: 15 minutes

Ingredients

3/4 cup oil-packed sun dried tomatoes

1/3 cup of black olives (no pits)

1 tablespoon of green scallion thinly sliced

1 1/2 tablespoons of rice vinegar

2 tablespoons of water

1/3 cup of olive oil

garlic powder to taste

salt to taste

Preparation

Puree all ingredients except oil, garlic powder, and salt in a food processor. With the motor running slowly add the oil.

Season with garlic and salt to taste.

Enjoy your dip!
